Fluffy Honey Pancakes with Be Local New Zealand Honey
A Sweet, Light Breakfast with Real New Zealand Honey
Start your day the delicious way with these fluffy honey pancakes made with Be Local New Zealand honey. Soft, sweet, and irresistibly airy, this honey pancake recipe elevates classic breakfast pancakes by using real honey — naturally sweet, aromatic, and free from refined sugar.
These pancakes pair beautifully with fresh fruit, a dollop of yoghurt, a pat of butter, and an extra drizzle of Be Local honey for that golden finish.
Why Be Local Honey Makes a Difference
Using Be Local New Zealand honey in pancakes adds natural sweetness and a delicate flavour that sugar simply can’t match. When cooked, honey caramelises on the surface of the pancake, giving a rich, golden hue and a fragrant finish. The floral notes from our honey varieties — from multi-floral to clover or mild Mānuka — make every bite unique.
Honey also contributes to moisture in the batter, resulting in pancakes that are tender, fluffy, and full of flavour.
Ingredients
(Makes about 10–12 pancakes)
-
1 ½ cups all-purpose flour
-
2 tablespoons sugar (optional – can be reduced if you prefer less sweetness)
-
2 teaspoons baking powder
-
½ teaspoon baking soda
-
¼ teaspoon salt
-
1 ¼ cups milk
-
1 large egg
-
2 tablespoons melted butter or oil
-
3 tablespoons Be Local New Zealand Honey, plus more for serving
-
1 teaspoon vanilla extract (optional)
How to Make Honey Pancakes
-
Mix the dry ingredients
In a large bowl, whisk together flour, sugar (if using), baking powder, baking soda, and salt. -
Prepare the wet ingredients
In another bowl, whisk together milk, egg, melted butter (or oil), Be Local honey, and vanilla extract until smooth. -
Combine batter
Pour the wet ingredients into the dry ingredients. Stir gently until just combined — small lumps are okay! Avoid overmixing for the fluffiest pancakes. -
Heat the pan
Preheat a non-stick pan or griddle over medium heat. Lightly grease with butter or oil. -
Cook pancakes
Pour about ¼ cup of batter per pancake onto the hot surface. Cook until bubbles appear on the surface and edges start to set, about 2–3 minutes. Flip and cook the other side until golden. -
Serve warm
Stack your pancakes high and drizzle generously with extra Be Local honey. Add fresh berries, sliced banana, or a sprinkle of nuts for extra flavour and texture.
Serving Ideas
These honey pancakes are perfect with:
-
Fresh berry compote
-
Greek yoghurt
-
Toasted almonds or pecans
-
Cinnamon and sliced bananas
-
A scoop of vanilla ice cream for a dessert twist
For a classic breakfast experience, serve with extra Be Local honey, a pat of butter, and a cup of rich coffee or tea.
Honey Pancake Tips
-
Don’t overmix your batter — gentle folding keeps pancakes tender.
-
Keep cooked pancakes warm in a low oven (about 90°C / 200°F) while cooking the rest.
-
Swap milk for buttermilk for even fluffier texture and tangy flavour.
-
Choose your favourite Be Local honey variety — multi-floral for balanced sweetness or clover for a lighter profile.
