Queenstown Alpine Honey
Location: Queenstown, base of Coronet Peak, Lake Hayes and Arrowtown
Flavour: Soft and mild, peach, fudge, light floral.
Summary: Made from local pollen including Taramea, Kamahi, Matagouri, Clover, Manuka and Erica. Very local honey, with hives visible in public areas.

Flavour: Bold, aromatic and intensely herbal, with a clean, savoury finish and notes of sun-baked earth.
Summary: Savoury rather than just sweet. Superb with sharp aged cheddar or a creamy blue, as a glaze for Central Otago lamb, or on crusty sourdough.

Gibbston Valley might be famous for its Pinot Noir, but have you tried the honey? The wild thyme was first planted by gold miners in the 1860s, and today it’s the real treasure left in the valley. Our hives sit in the rocky, sun-baked hills, where the Southern sun concentrates the aroma of the thyme blossom. It’s rugged, sunny, and tastes exactly like a Central Otago summer.

Southern Alps Beechwood Honeydew
Location: Southern Alps of New Zealand
Flavour: Golden syrup, maple, caramel, butterscotch.
Summary: Stays naturally liquid and never crystallises. A lovely swap for sugar, and great on feta-based salads or with cheese.

Honeydew is the newest and most talked-about honey variety in New Zealand. Unlike traditional honey, it's made when bees gather sweet secretions from native scale insects on the bark of the black beech trees. This unique process creates a deep, silky honey with a flavour unlike any other. Found within the vast native Beechwood forest throughout the South Island’s Southern Alps.
