Raw mānuka from Queen Charlotte Sound in the Marlborough Sounds. The hives sit in bays you can only reach by boat or on foot.
Where it's from. These are our founder Ray's own hives, on steep, bush-covered hills that run straight down to the water. Ray and John Kawala hauled hives by boat, barge and quad bike into at least 15 bays and sites around the Sound. The mānuka flowers in sea air, a long way from towns and farms.
What it tastes like. Smooth and rich. Warm herbal notes, caramel, and a light mineral edge from the coast. Gentler than most high-grade mānuka.
How to enjoy it. A teaspoon straight from the jar. With an aged gouda or a salty pecorino. Stirred into warm tea, not boiling. Keep it below 37°C so it stays raw.
