The wild thyme was first planted by gold miners in the 1860s, and today, that’s the real treasure left in the valley. It’s rugged, sunny, and tastes exactly like a Central Otago summer.
The Legacy: High in the rocky hills of Central Otago, the landscape is defined by the "historical grit" of the 19th-century gold rush. Our hives sit in this untamed, arid environment where the intense Southern sun concentrates the essential oils within the thyme blossoms, capturing over 160 years of botanical history.
